In 2015, I made a decision that changed the direction of my life. I launched Born & Raised Waffles from a converted horse trailer. At the time, horse box conversions were rare across Northern Ireland and Ireland. The set-up was unusual, and it turned heads at markets, weddings and festivals. More importantly, I soon learned that running a successful food truck was about more than good waffles. It was about being visible online and making it easy for people to book me.
The effort paid off. We grew from weekend stalls to large corporate events, private parties, community festivals and film shoots. One highlight still makes me smile. In 2018, Liam Neeson hired me for a film set. I have been talking about it ever since because it showed me that a small food truck can land amazing opportunities when it stands out and is easy to find.
